Slow-cooked Country Pork Ribs

It’s great to come home to the aroma of barbecued meat. This version of country-style ribs requires prep time the night before, but the process is simple enough to intersperse with preparations for that evening’s dinner. We serve these easy ribs with a salad or steamed veggie and oven-fried potatoes.

4 lbs. country-style pork ribs, approximately ½ lb. more if bone-in

Salt and black pepper to taste

1 medium yellow onion, sliced

2 C barbecue sauce (Try my recipe for a homemade sauce.)

The night before: Trim some of the fat off the ribs. Rub the ribs with salt and pepper. Allow to sit for ½ hour. Broil for approximately 8 minutes on each side to brown and render some of the remaining fat away. Layer the onions, ribs and barbecue sauce in the slow-cooker’s vessel. Cover and refrigerate overnight.

The morning before: Place the vessel in the slow cooker, cook contents on low for 6 to 8 hours.
